A lot of precautions were taken surrounding Environment Canada’s Flash-Freeze warning of Wednesday; significant weather events were declared; if you’re an apartment dweller, perhaps your landlord salted the entrance-way and the building’s parking lot- maybe you even bought boots with cleats!
But about that freeze, who warned the maple trees?
That’s Shirley Fulton-Deugo, whose 400 acre sugar bush was fully tapped by February 21st. She says the rollercoaster thermometre ride is always better on the cold side.
If conditions are too warm, the danger is the maple trees will bud prematurely.
Fulton-Deugo says with the Flash Freeze warning the true danger was accompanying high winds.
Mother Nature, versus the science of sweetness in Ontario’s Maple Syrup capital.
