This week’s Grant Can Cook morphed into something entirely different as it was happening.
A little inside baseball: I typically cook these meals on Wednesday’s, as that’s generally my only free night during the week after work, so I set out to do the same this week.
On Tuesday I decided to cook some chicken breasts I took out of the freezer the night prior, but when I opened my fridge after work they hadn’t thawed out yet and I’d have to wait another day.
But that’s Wednesday, and that’s Grant Can Cook night. And I’ve already done two chicken-based meals in four weeks, I’m not doing a third in five. So in that moment, Tuesday became my Grant Can Cook meal.
I took a look at what I had in the fridge and decided right there to use my leftover meat and sauce I made for last week’s stuffed peppers, which I wasn’t all too thrilled with originally, and to cook up some pasta noodles. That’s it, that’s all. It’s not a sexy meal, but it’s using what I had to make sure no food went into the garbage, a valuable skill that I did not previously have before this journey began.
